Blue Cheese Chips
Ingredients:
1 cup - Whipping cream
2 tsp. - Cornstarch
5 oz. - Crumbled blue cheese, divided use
1/2 oz. - Fresh lemon juice
2 tsp. - Cracked black pepper
1 tsp. - Kosher salt
8 oz. - Thick cut potato chips
1 oz. - Fresh chives, minced
Preparations:
1. Heat cream to a simmer. Remove from heat.
2. Make a slurry of cornstarch and 1 Tbsp. water; add to cream. Add 4 oz. of blue cheese; mix with stick (immersion) blender. Add lemon juice, salt and pepper to taste. Strain through chinois.
3. Put chips in heat-resistant bowl. Warm in a 350F oven. Add cheese sauce; toss very gently to coat. Transfer to serving dish; top with remaining cheese and chives. Serve at once.
