Whether you are going to make a voyage or just want to organize a wonderful romantic dinner with the closest person, you always think about possible places for dining and the dishes, which will make the event absolutely unforgettable.
There is one right answer for these thoughts and questions: take blue cheese and do anything with it you want. People know a lot of recipes with blue cheese, and if you use some of them it will be really a great lifetime experience. Bright and delicious in the end.
Ingredients:
• 1 pound whole wheat penne
• 1-1 1/2 cups walnuts
• 1-2 Tbs olive oil for toasting the walnuts
• 1-1 1/4 cups sliced roasted red peppers
• 2-3 chopped green onions
• crumbled blue cheese to taste (approx. 1 cup or so)
• olive oil for dressing the cooked pasta
• salt
Preparation:
Once the pasta water has come to a boil, add one pound of whole wheat penne and stir that around so it doesn't stick to itself. Adjust the heat on that so it's at a nice rolling simmer. While that's cooking, use a heavy bottomed saute pan with a little olive oil on medium heat to toast about 1-1 1/2 cups of walnuts.
Stay with them and toss them around as they're toasting. After they've turned a light brown, season them with a little salt and take them out of the pan to cool. As the pasta is finishing up, make sure you have cup or so of chopped roasted red peppers and 2 or 3 chopped green onions ready to go to toss with the pasta when it's done.
After the pasta is cooked to your liking and well drained, toss it into a large mixing bowl with a good splash of extra virgin olive oil. Add the roasted red peppers, the chopped green onions, the toasted walnuts and crumble in as much blue cheese as you like and toss it all together.
Hints:
Substitute goat cheese or feta cheese for the blue cheese if you like. Throw in some fresh baby spinach for color and added nutrition as you're tossing everything together.
