Blue Cheese Stuffed Mushrooms, Olives And Dates
Blue Cheese Stuffed Mushrooms with Grilled Onions
Mushrooms are stuffed with blue cheese and grilled with onion slices to make a stunning side dish for any barbeque.
Ingredients:
» 1 pound fresh mushrooms, stems removed
» 8 ounces blue cheese
» 3 medium onions, sliced into rings
» ¼ cup olive oil
Preparation:
1. Preheat an outdoor grill for high heat, and lightly oil grate. Fill mushroom caps with crumbled blue cheese.
2. Place onion slices and mushrooms (cheese side up) onto the prepared grill. Turn onions over frequently until tender. Do not turn over mushrooms. Grill until blue cheese has melted, and mushrooms are tender. Remove mushrooms to a serving plate, and top with grilled onions.
Blue Cheese Stuffed Olives
Ingredients:
» 24 almond slivers
» Essence
» 1 (10 ounce) jar large pitted green olives (about 24 olives)
» ¼ cup blue cheese
» 3 cloves garlic, smashed
» 10 whole black peppercorns
Preparation:
Preheat the oven to 350 degrees F. Place the almonds in a small baking sheet and lightly season with Essence. Roast until fragrant and light golden in color, about 6 minutes. Remove from the oven and let cool slightly.
Drain the olives, reserving the brine. Form 1/2 teaspoon of blue cheese around each almond sliver and stuff each into an olive. Return the olives to their jar, layering with the garlic and peppercorns. Pour the reserved brine over the olives to completely cover. Tightly cover and shake well. Let marinate refrigerated and sealed for at least 2 days.
Blue Cheese Stuffed Olives - Yield: 1 jar stuffed olives
Blue Cheese Stuffed Dates
Ingredients:
» 2 ounces Blue cheese
» 12 dried dates, pitted and cut into half lengthwise
» 24 blanched almonds, toasted cayenne pepper
Preparation:
1. In a small bowl, mix the cheese until creamy with a hand mixer. You may need to add a few drops of milk if the cheese is crumbly. Set aside.
2. Place the dates on a serving platter. Using a knife, spread about 1 teaspoon of cheese on the cut side of each date. Top with 1 almond. Sprinkle the stuffed dates with a dash of cayenne pepper and serve.
Makes 6 to 8 servings.
Tip: For a variation, use pitted dried plums (prunes) or dried figs.
