Mascarpone and Blueberry Pikelets Recipe Makes 24.
Ingredients
* 1 cup self-raising flour
* 2 tablespoons caster sugar
* pinch of bicarbonate of soda
* 3/4 cup milk
* 1 egg
* 20g butter, melted
* 1/2 cup mascarpone cheese, softened (see note)
* 250g fresh or frozen blueberries
* 2 tablespoons honey, to serve
Method
1. Sift flour into a bowl. Stir in sugar and bicarbonate of soda.
2. Whisk milk and egg together in a jug until well combined. Make a well in the centre of flour mixture. Pour in milk mixture. Stir gently to form a batter.
3. Heat a large, non stick frying pan over medium heat. Brush the base with butter. Drop small spoonfuls of batter into hot frying pan. Cook, in batches, for 2 to 3 minutes or until small bubbles start to form on the surface of pikelets. Carefully turn over. Cook a further 1 to 2 minutes, or until cooked through. Transfer to a wire rack to cool.
4. Place pikelets onto serving plates. Top with a dollop of mascarpone, blueberries and a drizzle of honey. Serve immediately.
Note: Mascarpone is an Italian cream cheese. It can be found in tubs in the cheese section of your supermarket. You can replace it with soft cream cheese.
